The President Hotel’s Chef Jacques Swart

He’s shared a recipe for his Absolutely FAB (Feta, Avo, Bacon) pizza for you to try during lockdown. It’s cost-effective, easy to make, and delicious. Vegetarians can swap the bacon for mushrooms.

Recipe: Absolutely FAB (Feta, Avo, Bacon) pizza

Yields: 4 large round or rectangular bases

Pizza Dough

  • 800 g Stone ground wheat Flour
  • 50g Salt
  • 45g Yeast – fresh (instant will also work, note: instant yeast is stronger than fresh)
  • 600 ml Water – Luke warm
  • 150 g Extra virgin Olive oil
  • Semolina – hand full for extra crunch when rolling out to put at the bottom of the base

Method

In a large bowl, combine the flour, salt and yeast.
Make a well in the centre and combine the luke warm water and oil into the flour; start by incorporating the mixture until all flour and water is mixed together
Turn out onto a floured surface and start kneading the dough for 3-4 minutes.
Once an elastic and slightly sticky dough is achieved, place into an oiled bowl and allow to prove somewhere warm for 2-3 hours.
Knock the mixture back, cut into 4 equal pieces and roll out to the desired shape and size/thickness.

Tip: pre-bake the base for one minute to give more flexibility of handling the pizza once toppings are on.

Tomato Base Sauce

  • 2 by 410g tins Whole peeled tomato, blended or crushed
  • 1 small white onion, diced
  • 3 cloves fresh garlic
  • 50g fresh oregano
  • 30 ml extra virgin olive oil
  • Salt to taste

Method

Heat up a pot to medium high heat, add oil followed and onions. Sweat off the onions and sauté until soft; add garlic and salt and cook for an extra few minutes.
Add the blended tomato and bring to a simmer for 6 minutes.
Add the fresh oregano and remove to cool down completely.

Topping ingredients

  • Tomato base sauce
  • Mozzarella cheese
  • Diced streaky bacon
  • Feta cheese
  • Peppadews
  • Avocado
  • Fresh Basil

Method

Turn your oven to the highest heat it can go.
Put the tomato sauce down onto the pizza base first followed by grated cheese, scatter the other toppings as you please keeping the avocado and basil for after the pizza has been baked.
Serve hot. Leftovers can be kept in the fridge and reheated in a warm oven.
